Pistachio-date bites [Vegan]

I love dates. And I’m not just talking about long walks on the beach followed by a roof-top candlelight dinner and a peck on the cheek. I’m talking about sweet, chewy, lovely dates. These date “truffles” are a healthier version of regular truffles but are just as sweet.

Here’s how to make pistachio-date bites:

Adapted from this recipe. Makes about 12 small balls.

1/2 cup dates (mine were dry so I soaked them in boiling water for 10 minutes to make them as tender as a first kiss)
1/2 cup raw pistachio nuts (could be roasted)
1 tsp vanilla

Method:

1. Pulse 1/4 cup of pistachios in food processor until finely ground. Reserve for later.

2. Add all remaining ingredients into a food processor and blend until sticky. (If it isn’t mouldable try adding a little nut butter.)

3. Roll into balls and cover with reserved ground pistachios.

4. Keep in fridge to allow orbs to firm up.

    I can certainly vouch for these pistachio date bites. I ate nearly half of them for desert after dinner; just couldn’t stop. Yup, they’re good.
