Moroccan Quinoa [Vegan]

Because I love quinoa. Enough said.

Moroccan Quinoa Recipe

1 cup quinoa (rinsed)
1 1/2 cups vegetable stock or water
1 shallot  chopped
1/2 tsp curry powder
1/2 tsp tumeric
1/4 tsp cinnamon
salt and pepper
1 red, yellow or orange pepper
1 extra large carrot or 2 medium carrots
2 cups chopped kale
1/4 cup almonds
1/4 cup raisins

Method:

1. Bring broth/water and quiona to a boil and let simmer until quinoa is cooked (when the curly things detach).

2. Meanwhile, fry shallot and spices for a few minutes. Then add veggies and cook covered until tender.

3. Combine quinoa with veggie mixture and add almonds and raisins.

This dish can be served hot or cold.
