Shitake-Kale Soba noodles [Vegan]Posted: September 11, 2011
As I procrastinate working on my first assignment of the year I decided to cook dinner, then I realized how delicious it was, then I had to take a picture, then I had to blog about it. So here is what I made and how to do it:
Shitake-Kale Soba noodles (serves one)
1 clove garlic (minced)
1 tsp olive oil
1/2 cup shitake mushrooms (leave unchopped)
1 stalk of kale (ripped)
1 tsp worth of mushroom bullion cube (or any veggie bullion cube or miso paste)
1/3 cup cooked chickpeas
1/2 cup of soba noodles
1. Boil water for soba noodles and allow to cook to desired tenderness while you cook the shrooms and kale.
2. Saute garlic in oil for 2 minutes. Then add mushrooms and kale, cover and steam until mushrooms are tender and kale is bright green.
3. Meanwhile make a paste with the bullion cube and 2 tblsps of hot-ish water. Add this to the pan of shrooms and kale.
4. Add the chickpeas and noodles and remove form heat mixing all ingredients together. Sprinkle with pepper.
5. Finish assignment.
