Alpine Granola [Vegan]

I recently went on a field trip to a nearby alpine ecosystem. It was very demanding both educationally and physically. Here is what I packed to get me started in the mornings. It has LOTS of fibre…so don’t eat too much at once if you get my drift.

Here’s how to make Alpine Granola:

3 cups of rolled oats
1/4 cup ground flax seeds
1/4 cup ground quinoa (optional)
1 cup assorted chopped or not chopped nuts- depending on if you would like a chunky texture (I used chopped pecans, chopped walnuts and whole almonds)
1 tsp cinnamon
1/2 cup honey or maple syrup
1/4 cup warm water
2 tblsp olive oil (or a nut oil-like walnut)

Method:

1. Preheat oven to 325F. Combine all dry ingredients and stir to mix.

2. Combine honey and water (heat in microwave if necessary to create a pourable mixture).

3. Drizzle honey mixture and oil onto dry ingredients and stir.

4. Cook for three 10 minute intervals (30 minutes total) stirring between each interval. Granola should be a lightly toasted brown colour, you may have to adjust cooking time to achieve desired toastedness. Allow to cool.

*Note: You can add dried fruit to this granola after it has cooked and been cooled.
