Curry Zucchini Rolls

This dish marries the fresh italian flavours of Mediterranean vegetables with the heat of indian curry spices. I followed the recipe from edibleperspective and they turned out beautifully. I found that these little bites pair well with a bit of quinoa or just as a fresh appetizer. The creaminess of the goat cheese seems to even out the spice of the curry. I think I will try this recipe maybe with some italian herbs instead of curry to achieve a different flavour.
