Peanut Butter Goji Granola

Warning the recipe you are about to read will produce a highly addictive substance. This is a quick and easy version of granola. It takes about 15 minutes to make! As I was shovelling handfuls of this stuff into my mouth this afternoon, I thought to myself….maybe I should blog about how delicious this is, so here it is. 

Peanut Butter Goji Granola (adapted from The Sweet {Tooth} Life
Makes about 3 cups of granola.

1/4 cup natural peanut butter
1/4 cup honey
1/2 tsp vanilla
1/2 tsp cinnamon
dash of nutmeg or allspice 
1/2 tsp of salt 
2 cups oats
1/2 cup chopped almonds
1/2 cup goji berries (or dried fruit of your choice) (optional)
1/4 cup each chia seeds and hemp seeds (optional)

Method:

1. Melt peanut butter and honey in a large pot in the stove over medium heat. Stir in vanilla. Meanwhile, combine the oats, spices and almonds and add this mixture to the peanut butter mixture with the heat turned off. Leave the chia, hemp and dried berries out for now. 

2. Spread combined ingredients on a baking sheet or in a glass dish and bake at 325F for 10 minutes. It might feel a little soft, but after cooling it will firm up. After removing the granola from the oven, stir in the remaining dried fruit and desired seeds. Allow to cool on the counter until firm.
